The project is designed to keep the business afloat for as long as restaurants and caf\u00e9s in S\u00e3o Paulo remain shut down to prevent coronavirus from spreading.<\/p>\n<p>The first class will cover Arabs\u2019 relationship with coffee. Instructor Cristiana Couto said the Arab people were the first to make the bean into a drink. \u201cThe oldest written records are by Arabs. As far as we know, they were the first to make the drink. For example, the earliest accounts of the roasting of coffee, circa the 12<sup>th<\/sup> century, are from Arabs. We must remember that up until the 19<sup>th<\/sup> century, coffee was considered medicine, and the Arabs used to be great physicians then!,\u201d said Couto, who holds a postdoctoral degree in History of Science from Pontif\u00edcia Universidade Cat\u00f3lica in S\u00e3o Paulo (PUC-SP), where she studies the science-food connection in 19<sup>th<\/sup> century Brazil via recipe books.<\/p>\n<figure id=\"attachment_270118\" aria-describedby=\"caption-attachment-270118\" style=\"width: 225px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/anba.com.br\/wp-content\/uploads\/2020\/03\/WhatsApp-Image-2020-03-24-at-13.40.49.jpeg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"wp-image-270118 size-medium\" src=\"https:\/\/anba.com.br\/wp-content\/uploads\/2020\/03\/WhatsApp-Image-2020-03-24-at-13.40.49-225x300.jpeg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/anba.com.br\/wp-content\/uploads\/2020\/03\/WhatsApp-Image-2020-03-24-at-13.40.49-225x300.jpeg 225w, https:\/\/anba.com.br\/wp-content\/uploads\/2020\/03\/WhatsApp-Image-2020-03-24-at-13.40.49-768x1024.jpeg 768w, https:\/\/anba.com.br\/wp-content\/uploads\/2020\/03\/WhatsApp-Image-2020-03-24-at-13.40.49.jpeg 960w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/a><figcaption id=\"caption-attachment-270118\" class=\"wp-caption-text\">Couto is the author of books like Sou Barista, which placed 3rd in the Cuisine category at the 2014 Jabuti Awards<\/figcaption><\/figure>\n<p>Also a journalist specializing in gastronomy, Couto has written for websites and dailies like <em>Folha de S.Paulo<\/em> and magazines including <em>Prazeres da Mesa<\/em>, <em>Menu<\/em> and <em>Revista Espresso<\/em>. Although her studies mostly revolve around Brazil, she argues that in being pioneers, Arabs have influenced the entire history of coffee. \u201cTheir importance cannot be overstated: they mastered techniques in farming, infusion, and eventually roasting. They also left medical writings on the drink,\u201d she said.<\/p>\n<p>According to Couto, the lesson will include the relevance of coffee to countries such as Yemen, whose Mokha port was the first such facility in the world to ship out the grain.
