{"id":390167,"date":"2025-06-13T16:30:00","date_gmt":"2025-06-13T19:30:00","guid":{"rendered":"https:\/\/anba.com.br\/?p=390167"},"modified":"2025-06-13T13:26:13","modified_gmt":"2025-06-13T16:26:13","slug":"the-paths-of-arab-cuisine-in-brazil","status":"publish","type":"post","link":"https:\/\/anba.com.br\/en\/the-paths-of-arab-cuisine-in-brazil\/","title":{"rendered":"The paths of Arab cuisine in Brazil"},"content":{"rendered":"\n<p>S\u00e3o Paulo \u2013 The stories behind recipes, famous restaurants, and even dining customs of Arab culture are explored through research, historical accounts, and preparation methods in Diogo Bercito\u2019s new book, <em>Brimos \u00e0 mesa: hist\u00f3rias da culin\u00e1ria \u00e1rabe no Brasil<\/em> [Brimos around the table: Stories of Arab cuisine in Brazil] (<a href=\"https:\/\/www.fosforoeditora.com.br\/\" target=\"_blank\" rel=\"noopener\">F\u00f3sforo<\/a>, 288 pages) to hit bookstores later this month.<\/p>\n\n\n\n<p>Author of <em>Brimos: Imigra\u00e7\u00e3o s\u00edrio-libanesa no Brasil e seu caminho at\u00e9 a pol\u00edtica<\/em> [Brimos: Syrian-Lebanese immigration in Brazil and its path to politics], published in 2021 by the same publisher, Bercito now explores how Arab dishes\u2014both savory and sweet\u2014have influenced Brazilian culture, and in turn, how they were shaped by the availability of local ingredients. The book also highlights the importance of Arab cuisine in preserving the identity of immigrants and their descendants in Brazil.<\/p>\n\n\n\n<p>In the book, Bercito describes the work\u2014a cultural history essay\u2014as the beginning of a \u201cconversation\u201d aimed at broadening the understanding of the \u201cadventures and misadventures\u201d of Arabs who immigrated to Brazil. He notes that younger generations no longer speak Arabic, but the language endures in the kitchen and in the names of dishes: <em>labneh<\/em> instead of <em>coalhada seca<\/em> (strained yogurt) and <em>betinjan<\/em> instead of <em>berinjela<\/em> (eggplant) are just two examples of how culture is preserved at the table.<\/p>\n\n\n\n<p>On his journey through Arab flavors, Bercito traces the origins of traditional recipes such as the sfiha. He also recounts the history of famous and long-standing restaurants that continue to bring immigrant recipes\u2014adapted to local tastes and ingredients\u2014to Brazilians.<\/p>\n\n\n\n<p>A journalist for <em>Folha de S. Paulo<\/em>, Middle East specialist, and doctoral candidate in history at Georgetown University, Bercito drew on primary sources in his research. Newspapers, magazines, and immigrant records were among the materials he used to write <em>Brimos \u00e0 mesa<\/em>.<\/p>\n\n\n\n<p>The author used research from the <strong>Arab-Brazilian Chamber of Commerce<\/strong> (<a href=\"https:\/\/ccab.org.br\/en\/\" target=\"_blank\" rel=\"noopener\">ABCC<\/a>)\u2014conducted by H2R Insights &amp; Trends and former Ibope Intelligence polling firm\u2014including a study that estimates 12 million people of Arab descent in Brazil. He also cites another finding from the survey, which shows that 72% of respondents said they maintained their connection to their homeland through food.<\/p>\n\n\n\n<p>Some of the key ingredients of <em>Brimos \u00e0 mesa<\/em> are numbers, stories, traditional dishes, memories, and restaurants.
